Marukan Superfoods Salad with Turmeric-Infused Dressing

Salad:
2 Cups
Kale, stems removed and chopped
As Desired
Olive Oil
2 Cups
Quinoa, cooked
1 Cup
Mixed Berries, Strawberries, Blueberries, and Raspberries
1
Orange, peeled and segmented
1/4 Cup
Pomegranate Seeds, plus more for garnish
As Desired
Chopped Basil Leaves, for garnish
Dressing:
1/3 Cup
Extra-Virgin Olive Oil
1 Tbsp
Honey or Maple Syrup
1 Tsp
Dijon Mustard
1 Tsp
Ground Tumeric
To Taste
Kosher or Fine Sea Salt and Pepper

INSTRUCTIONS

In a large bowl, massage the chopped kale with a drizzle of olive oil for a few minutes to soften it.

 

Add the cooked quinoa to the kale, along with the mixed berries, orange segments, and pomegranate seeds. Toss gently to combine.

 

Prepare Dressing: 

In a small bowl, whisk together Marukan Organic Rice Vinegar, olive oil, honey or maple syrup, Dijon mustard, ground turmeric, salt, and pepper. Adjust the seasoning to taste.

 

Drizzle the turmeric-infused dressing over the salad and toss gently until everything is well coated.

 

Plate the salad and garnish with additional pomegranate seeds and a sprinkle of chopped fresh basil.
